Kellen’s Secret [free-form] Spinach Salad

Sentry Insurance Spinach Salad RecipeWant to add a healthy, flavorful side dish to your menu? This salad recipe is quick, light and easy to put together for entertaining.


Baby spinach leaves
Balsamic vinaigrette dressing – see recipe, below
Bleu cheese – get as funky as you like, I prefer gorgonzola
Red onions – French cut
Thin-sliced button mushrooms are good, but optional.
Dried cranberries or craisins
Chopped pecans
Croutons – if you have them, if not, save some bread and make your own.
Strawberries and Avocado can be an amazing addition if they are in season.


Toss the spinach leaves with the simple balsamic vinaigrette if you wish, then top with the remaining ingredients –or- feel free to build and mix up the salad and hit it with the dressing as a finish, it keeps it looking very clean if you’re entertaining. It just doesn’t get any better than that.

Kellen’s Simple Blender Balsamic Vinaigrette


3 tbsp. balsamic vinegar (white balsamic works as well)
3 tbsp. red wine vinegar
3 tbsp.Dijonmustard
3 cloves garlic – peeled
3/4 cup oil – 6 tbsp. ea. extra-virgin olive oil & canola mixed
1 1/2 tsp. kosher salt


Combine vinegars, mustard and garlic in a blender. While running, add the oil until youhave reached a desired consistency. Taste and adjust salt. Add herbs, if desired.
