Chicken Mac and Cheese recipe

chicken mac and cheeseSpring is slow to come to Wisconsin this year, so a warm dinner sounds perfect. Check out @1800 Team Member Alicia Thompson’s simple recipe for chicken mac ‘n’ cheese.

This recipe has no set amounts. Just use your preference.

Chicken (Cooked and diced)

Pasta (Whatever kind you want; I use orzo)

Shredded cheese (I use cheddar and mozzarella)

Roux  (Flour and butter)

Milk

Cayenne pepper (for some heat)

Salt and pepper

Make a roux with equal parts butter and flour in a stock pot stirring continuously.  Slowly add milk to get JUST UNDER the consistency you want (the cheese will thicken it up a little) and stir continuously.  Take off heat; add the cheese to get the flavor and richness you want. Fold in the pasta and chicken and serve.
